Greek White Bean Salad

INGREDIENTS:

  • 1 cup soaked small white beans (soaked overnight)

  • 1 medium red pepper, sliced into thin strips

  • 3 tablespoons fresh flat leaf parsley

  • 1 small red onion, cut into thin slices

  • ½ cup Greek olives

  • 4 Pepper Cheney’s

  • Juice of 1 lemon 

  • 1 cup Fancy Peasant GEVOO


METHOD:

  1. Cook soaked beans for a half an hour or until soft enough to eat (we like our beans firm but cooked through).

  2. Drain and add to a large serving or mixing bowl.

  3. Add all the other ingredients.

  4. Mix Well.
