Greek White Bean Salad
INGREDIENTS:
1 cup soaked small white beans (soaked overnight)
1 medium red pepper, sliced into thin strips
3 tablespoons fresh flat leaf parsley
1 small red onion, cut into thin slices
½ cup Greek olives
4 Pepper Cheney’s
Juice of 1 lemon
1 cup Fancy Peasant GEVOO
METHOD:
Cook soaked beans for a half an hour or until soft enough to eat (we like our beans firm but cooked through).
Drain and add to a large serving or mixing bowl.
Add all the other ingredients.
Mix Well.
