Not So Fancy Smashed Potatoes
If you ever thought about planting potatoes this is your sign to do it! It may be the most fun, delicious, and exciting veg we have planted yet in the past 7 years! All of the ingredients for this insane, creamy potato wonder are straight from our garden and it’s simple AF.
INGREDIENTS:
Handful of potatoes, cleaned
Bunch of fresh flat leaf parsley, chopped
Bunch of scallions, finely chopped
Fresh garlic, minced
Salt and black pepper
METHOD:
Preheat oven to 400°
In a large pot, boil your cleaned, garden potatoes in heavily salted water until almost tender.
Line a baking tray with parchment paper and add your potatoes. Have your littles smash them with a glass, cup, bat, whatever’s clever.
Cover with fresh garlic, parsley, scallions, and cubed pieces of vegan butter. Slather with GEVOO, salt, and black pepper.
Bake until crispy.
