Greek Goddess Greens

These boiled greens are a staple in any Greek household. They are easy to prepare, delectable and accompany any dish beautifully. Make them in a flash and double the recipe because they will be gone before you can blink. Substitute the clean, pure taste of any wild green in this recipe and enjoy.

INGREDIENTS:

  • 2 bunches beet greens or 2 heads rainbow chard or any wild green

    1. ¼ cup GEVOO 

    2. 4 sprigs fresh green onion, sliced 

    3. 2 garlic cloves, sliced 

    4. Salt

    5. Pepper 

    6. 4 tablespoons red vinegar


METHOD:

  1. Boil your greens in salted water about 5 minutes. Set aside to cool before roughly chopping

    1. On medium heat, add GEVOO and sauté garlic and spring onion until fragrant (making sure not to burn).

    2. Add boiled greens, salt and pepper. Sauté about 5 to 7 minutes.

    3. Take off the heat. Add vinegar before serving.
