Mπουγιουρντί | Meze (Serves 2-4)
Baked Spicy Feta “Boujourdi”
Blistery tomatoes smothered in feta, need I say more? I love to eat this dish with chunks of piping hot peasant bread and healthy swigs of good red wine.
INGREDIENTS:
1 large tomato, sliced
½ small japaleño or hot green pepper, half moon slices (optional)
8 oz feta
⅓ cup GEVOO
1 tspn Greek mountain oregano
Pinch black pepper
METHOD:
Preheat oven to 400°F
Layer sliced tomatoes on bottom of a porcelain baking dish (*7x7” dish is ideal)
Crumble large pieces of feta over sliced tomato
Add green pepper slices on top of feta spread
Sprinkle mountain oregano, black pepper and olive oil over feta
Bake for 20 minutes
Serve hot
