Fancy Peasant Fava

Heres the thing - Greek Fava isn’t made with fava beans it’s actually made from split peas..(Greeks are confusing I know, but we invented like everything so give us a break). Serve this with crusty sourdough or loads of veg to dip!

INGREDIENTS:

  • 1 pound yellow split peas, washed

  • 5 cups of water

  • 1 large white onion, sliced

  • Sprinkle of thyme

  • ¼ cup of GEVOO

  • Salt


METHOD:

  • In a large saucepan, add yellow split peas, onions, thyme, GEVOO, salt, and water. Boil for 45 minutes on low heat under tender. (Remove any foam, add more water if necessary)

  • Next, blend mixture until soft, add salt if needed

  • Serve on a plate with capers, tomatoes, sautèd onions, fresh flat leaf parsley, and a drizzle of GEVOO on top.
