Πιπεριές Kέρατα I Vegetables
Piperies Kerata – Green Peppers, tomatoes and melted feta
INGREDIENTS:
4 long green peppers, cleaned and cut into 4 pieces the long way
5 ounces sweet cherry tomatoes, halved
A chunk of GOOD feta, crumbled into large chunks
Greek Extra Virgin Olive oil (GEVOO)
Salt and pepper
Greek mountain oregano
METHOD:
Heat 1⁄4 a cup pf Greek Extra Virgin Olive Oil in a medium sized frying pan over medium-high heat and add peppers
Sauté on both sides until they begin to turn golden.
Add tomatoes and sauté about 2 minutes. Add feta crumbles and a tablespoon of oregano.
Take off fire. Add a splash of EVOO, salt and pepper.
