Longevity Soup

This veggie-loaded detox elixir is filled with all the necessary vitamins and minerals for hydration and balance. Slow down and connect with your loved ones over this beautiful soup.

INGREDIENTS:

  • 1 potato, peeled and diced

  • 2 stalks of celery cut into strips

  • 1 carrot cut into slices

  • 1 zucchini, cut into cubes

  • 1 cup sliced ​​white mushrooms

  • 1 leek cut into rings

  • 1 whole onion, cut with a cross on top

  • 2 bay leaves

  • 2 cups of boiling water


    For serving:

  • 1 cup baby spinach

  • 1/2 cup chopped parsley

  • Juice of 1 lemon

  • A Drizzle of GEVOO


METHOD:

  1. Put all the ingredients into a pot

  2. Add the water and let it boil on medium heat for half an hour

  3. Use an immersion blender to puree a part of the soup to make it thicker

  4. Add the spinach, parsley, a little olive oil, lemon juice, salt, and freshly ground black pepper. Enjoy.
