Longevity Soup
This veggie-loaded detox elixir is filled with all the necessary vitamins and minerals for hydration and balance. Slow down and connect with your loved ones over this beautiful soup.
INGREDIENTS:
1 potato, peeled and diced
2 stalks of celery cut into strips
1 carrot cut into slices
1 zucchini, cut into cubes
1 cup sliced white mushrooms
1 leek cut into rings
1 whole onion, cut with a cross on top
2 bay leaves
2 cups of boiling water
For serving:
1 cup baby spinach
1/2 cup chopped parsley
Juice of 1 lemon
A Drizzle of GEVOO
METHOD:
Put all the ingredients into a pot
Add the water and let it boil on medium heat for half an hour
Use an immersion blender to puree a part of the soup to make it thicker
Add the spinach, parsley, a little olive oil, lemon juice, salt, and freshly ground black pepper. Enjoy.
