Greek Tomato Soup
This is peasant food at its best- extremely healthy, hearty, and EASY to make in less than 30 minutes. Top with some crusty sourdough and raw liquid gold for the ultimate comfort food.
INGREDIENTS
4 cups of water
2 cups vegetable stock
1 cup of home-grown garden tomatoes blitzed, or a 15 ounce can of chopped tomatoes
1/4 cup red wine (optional)
1 small onion, diced
2 carrots, passed through a grater
4 tablespoons olive oil
1 pound of orzo
Salt, Pepper, Red Hot Chili Flakes
METHOD
Add GEVOO, onion, and carrot to the pot and cook until tender
Add orzo, tomatoes, red wine, tomatoes, salt, and pepper
Cook until the orzo is tender :)
Garnish with GEVOO and red pepper flakes
