Σπανακόρυζο αυγολέμονο | Family Style
Spanakorizo Avogolemono
Classic Greek vegetarian dish that's comforting and full of delicious nutrients.
INGREDIENTS:
2 lbs. spinach, sliced
1 small sweet onion, diced
1 large tablespoons dill, finely chopped
2 scallions, sliced
½ cup of white rice
¼ cup of GEVOO
½ cup water
LATHOLEMONO SAUCE:
¼ cup GEVOO
Juice of ½ lemon
Whisk together well.
METHOD:
In a medium sized pot, add olive oil and sauté onions until golden brown. Add scallions and sauté for 2 minutes.
Next, add spinach, rice, and water. Cover and bring to a boil. Reduce to a medium boil for 20 minutes. Add salt and mix well.
Plate and pour latholemono sauce on top. Season with salt, pepper, and garnish with dill.
