Σπανακόρυζο αυγολέμονο | Family Style

Spanakorizo Avogolemono

Classic Greek vegetarian dish that's comforting and full of delicious nutrients.

INGREDIENTS:

  • 2 lbs. spinach, sliced

  • 1 small sweet onion, diced 

  • 1 large tablespoons dill, finely chopped

  • 2 scallions, sliced

  • ½ cup of white rice

  • ¼ cup of GEVOO

  • ½ cup water


LATHOLEMONO SAUCE:

  • ¼ cup GEVOO

  • Juice of ½ lemon

  • Whisk together well.


METHOD:

  • In a medium sized pot, add olive oil and sauté onions until golden brown. Add scallions and sauté for 2 minutes.

  • Next, add spinach, rice, and water. Cover and bring to a boil. Reduce to a medium boil for 20 minutes. Add salt and mix well.

  • Plate and pour latholemono sauce on top. Season with salt, pepper, and garnish with dill.
