Sexy Spring Greek Artichoke

INGREDIENTS:

  • 8 pieces frozen artichoke heart

  • 2 medium carrots, cut into circles

  • ½ cup of frozen peas

  • 2 cups filtered water

  • 2 medium yellow potatoes, cut into wedges

  • 1 large yellow sweet onion, diced

  • ¼ cup chopped fresh dill

  • ½ cup GEVOO

  • 4 scallions, chopped

  • Salt and black pepper

  • Juice of 1 lemon


METHOD:

  1. Sauté onion and scallion in olive oil In a heavy pan on medium fire until translucent.

  2. Shut off your fire.

  3. Add artichokes, peas, carrots, lemon juice, salt, pepper, dill and water.

  4. Add fire to come to a boil, then lower to low/medium heat and cover. Simmer for 40 minutes.

  5. Let it sit for at LEAST a half hour.

  6. Cover with more fresh dill and a splash of GEVOO.
