Sexy Spring Greek Artichoke
INGREDIENTS:
8 pieces frozen artichoke heart
2 medium carrots, cut into circles
½ cup of frozen peas
2 cups filtered water
2 medium yellow potatoes, cut into wedges
1 large yellow sweet onion, diced
¼ cup chopped fresh dill
½ cup GEVOO
4 scallions, chopped
Salt and black pepper
Juice of 1 lemon
METHOD:
Sauté onion and scallion in olive oil In a heavy pan on medium fire until translucent.
Shut off your fire.
Add artichokes, peas, carrots, lemon juice, salt, pepper, dill and water.
Add fire to come to a boil, then lower to low/medium heat and cover. Simmer for 40 minutes.
Let it sit for at LEAST a half hour.
Cover with more fresh dill and a splash of GEVOO.
