Easy Greek Chicken with Red Peppers and Onions
This seared boneless chicken thigh recipe is cooked on the stovetop and ready in under 20 minutes.
The best thing about it is the mouth-watering pan juices filled with SO MUCH flavor from the marriage of chicken & veg to top on your salad, gyro, pasta, or rice.
INGREDIENTS:
1 pack chicken thighs,cut into pieces roughly the same size
GEVOO to cover the entire bottom of your large skillet GENEROUSLY
1 onion chopped into half moons
2 red peppers cut into 4’s
Salt and Pepper
METHOD:
Add Chicken to the hot oil
Add in the onions
Press the peppers in on top
Salt and pepper
Cover and cook for 15-20 minutes
Stir and serve
Pro tips:
- cover chicken with lid for ten minutes before flipping over to cook other side
- use ALL your brown bits when serving
