Wine Lamb Chops with Chestnuts

INGREDIENTS:

  • 1 pound chestnuts

  • 1 large onion (finely chopped)

  • 1 red pepper (Julienne cut)

  • 1 yellow pepper (Julienne Cut)

  • 2 cups white wine

  • 1/2 cup GEVOO

  • 8 lamb chops

  • Salt and pepper


METHOD:

  1. Boil your chestnuts for 30 minutes on medium heat. Clean them and cut them into medium-sized pieces.

  2. Marinate your lamb chops with salt, pepper, and olive oil. Cook them in a grill pan on both sides until golden brown. Let them rest.

  3. Saute the onion, peppers, and peeled chestnuts for about 5 minutes in your oil. Add wine.

  4. Take a spoonful of the cooked mixture and melt it in the blender (this will help us to bind our sauce & make it more creamy). Add it to the rest and mix. The texture should be creamy.

  5. Add mixture to the lamb chops and serve.
