Beet and Walnut Pasta

INGREDIENTS:

  • 1 pound spaghetti

  • 2 large beets - each cut into 4 pieces and boiled for 20-25 minutes

  • ½ cup raw walnuts

  • 1 garlic clove

  • Juice of 1 lemon

  • 1 teaspoon of vinegar red

  • ¼ cup Fancy Peasant GEVOO

  • Salt and pepper


METHOD:

  1. Cook your pasta in boiled water.

  2. Blend boiled beets, walnuts, lemon, vinegar, garlic, GEVOO, salt and pepper.

  3. Pulse until puréed.

  4. Add mixture to pan (medium fire) with pasta and mix well.

  5. Add finely chopped walnuts.
