Strapatsada
In Greece, this popular dish is usually made for lunch or dinner as they aren’t so much into a proper breakfast, but we make this dish whenever because it’s that delicious and nutritious.
INGREDIENTS:
3-4 eggs
1 red pepper, de-seeded and sliced thin
1 bunch of green onions, chopped
2 fresh tomatoes, chopped
1/2 cup of fresh tomato sauce
Sourdough bread to serve (optional)
Chunks of feta cheese (optional)
Dried oregano and fresh parsley to top
METHOD:
In a medium sauce pan, sautè red peppers, green onions, and fresh tomatoes in GEVOO. Add tomato sauce and let cook.
Next, crack and disperse each egg in the pan giving them room to breathe. Cover with a lid and let eggs cook to your liking.
Serve on a plate and top with dried oregano, fresh parsley, and toasted sourdough.
