Στραπατσάδα | Brunch (serves 2-3)

Strapatsada

In Greece, this popular dish is usually made for lunch or dinner as they aren’t so much into a proper breakfast, but we make this dish whenever because it’s that delicious and nutritious.

INGREDIENTS:

  • 3-4 eggs

  • 1 red pepper, de-seeded and sliced thin

  • 1 bunch of green onions, chopped

  • 2 fresh tomatoes, chopped

  • 1/2 cup of fresh tomato sauce

  • Sourdough bread to serve (optional)

  • Chunks of feta cheese (optional)

  • Dried oregano and fresh parsley to top

  • GEVOO


METHOD:

  • In a medium sauce pan, sautè red peppers, green onions, and fresh tomatoes in GEVOO. Add tomato sauce and let cook.

  • Next, crack and disperse each egg in the pan giving them room to breathe. Cover with a lid and let eggs cook to your liking.

  • Serve on a plate and top with dried oregano, fresh parsley, and toasted sourdough.
