Tηγανητά κολοκυθάκια | Meze (serves 3-4)

Fried Zucchini Chips

Fancy Peasant style on the proper Milos special. Don’t forget the tzatziki. Let’s go!

INGREDIENTS:

  • 1 large zucchini

  • 1 medium/large eggplant

  • 1 cup organic flour

  • 1-2 cups GEVOO

  • Filtered water

  • Ice cubes

  • Seas salt


METHOD:

  • Using a mandolin or sharp knife, slice your veggies into paper thin chips.

  • Add flour to a ziplock bag with raw veg chips and shake until all the veg is lightly coated.

  • Pour enough GEVOO to reach at least halfway up the sides of the pan and heat well.

  • Dip the flour coated veg in the ice water (making sure to shake off any access water) and then carefully place to the hot oil.

  • Tip: divide the chips into batches of no more than one cup each. Do not fry more than one batch at a time.

  • Give them a nice stir so they don’t stick and cook until golden. (They should be lightly colored, but not browned)

  • Drain on fresh paper towels or brown paper bags and place in a warmed serving bowl lined with paper towels. Sprinkle with loads of sea salt and serve.

  • Never coat the veg to keep them hot as they will immediately turn soft and soggy
