Homemade Spinach Tortillas
Top these beauties with Taramasalata and any veg you have on hand for a delicious veggie pick me up!
INGREDIENTS:
1 cup of spinach
2 eggs
Salt & Pepper
Parsley
Make it vegan: use chickpea flower or tapioca starch instead of eggs!
METHOD:
Blend the egg, spinach, salt and pepper together
Pour into pan
Flip when bubbly!
Serve and enjoy!
