Homemade Spinach Tortillas

Top these beauties with Taramasalata and any veg you have on hand for a delicious veggie pick me up!

INGREDIENTS:

  • 1 cup of spinach

  • 2 eggs

  • Salt & Pepper

  • Parsley

  • Make it vegan: use chickpea flower or tapioca starch instead of eggs!


METHOD:

  • Blend the egg, spinach, salt and pepper together

  • Pour into pan

  • Flip when bubbly!

  • Serve and enjoy!
