Cherry Pie
INGREDIENTS:
6 eggs
1 ¼ cup sugar
1 cup of GEVOO
1 tablespoon of baking powder
2 cups of sifted gluten free flour
2 cups cherries, peeled and halved
Pinch of salt
1 tablespoon vanilla
METHOD:
Using a standing mixer, whip eggs and salt until mixture becomes fluffy. After a few minutes, add sugar and continue whipping
Next, add baking powder to sifted flour, GEVOO, and vanilla. Stir until blend becomes creamy
Add cake batter to a non-stick round pan (or parchment)
Add halved cherries
Bake at 350° for 30-35 minutes
Let cool before adding powdered sugar
