Cherry Pie

Fancy Peasant Homemade Cherry Pie

INGREDIENTS:

  • 6 eggs

  • 1 ¼ cup sugar

  • 1 cup of GEVOO

  • 1 tablespoon of baking powder

  • 2 cups of sifted gluten free flour

  • 2 cups cherries, peeled and halved

  • Pinch of salt

  • 1 tablespoon vanilla


METHOD:

  • Using a standing mixer, whip eggs and salt until mixture becomes fluffy. After a few minutes, add sugar and continue whipping

  • Next, add baking powder to sifted flour, GEVOO, and vanilla. Stir until blend becomes creamy

  • Add cake batter to a non-stick round pan (or parchment)

  • Add halved cherries

  • Bake at 350° for 30-35 minutes

  • Let cool before adding powdered sugar
